Pears Cooked in Cranberry Juice recipe

An inventive way to use cranberry juice, this tasty recipe yields blushing pink pears with the sweet subtle tastes of cranberry and cinnamon, making it a simple dinner-party dessert to whip up this Christmas.


  • 750ml cranberry juice
  • 1 cinnamon stick
  • 75g caster sugar
  • 8 pears


  1. Peel the pears, keeping the stems intact.

  2. Put the cranberry juice, sugar and cinnamon stick into a saucepan.

  3. Bring the mixture to a simmer until the sugar dissolves. Add the pears and cover the pot, then simmer for 15-20 minutes until tender. Remove the saucepan from the heat, leaving the pears in the cooking liquor. If you like, simmer the juices together until thickened to make a tasty sauce. Remember to turn the pears a few times whilst cooling so that their colour stays even.

Try adding a few peppercorns or cloves to the cooking liquor to alter the flavour. This recipe serves eight.
