Cranberry and Raspberry Jelly recipe

This simple jelly is wonderfully refreshing and makes a great alternative to the usual stodgy puddings to be found at this time of the year. Made with packet raspberry jelly (although you could use gelatine), this is a fab do-it-ahead pud.


  • 300g raspberries
  • 350g cranberries
  • 100g caster sugar
  • 225ml water
  • 2 x standard packs raspberry jelly squares


  1. Combine the water, cranberries and sugar over a medium heat. When they begin to pop, remove from the heat.

  2. Stir the jelly into this mixture until dissolved, then fold in the raspberries.

  3. Pour the mixture into a mould then chill in a fridge until set.

Serve with some thick double cream, custard or even ice cream. This jelly would also be lovely with some shortbread. This recipe serves 10.
