Frosted Cranberries recipe

These gorgeous cranberries are frosted in sugar and make a wonderful edible decoration for your Christmas cake or even your table decorations. You could also serve them as a dessert with some double cream.

  • 300g fresh cranberries
  • 225g caster sugar
  • 2 tbsp. water
  • 1 tbsp. liquid egg white (available from all good supermarkets, safe to use because of the pasteurization process. Liquid egg spray for topping cakes etc would also work.)

  1. Mix the water and egg white together. Add the cranberries and toss to coat.

  2. Pour the sugar onto a plate and toss the coated cranberries in the sugar. Place them on a tray or plate to dry for a few hours before using.

You could also do this with any other fruit, such as clementines, figs or raspberries. This recipe serves 14.
