Cranberry Coleslaw recipe

This unusual coleslaw combines cranberries, orange, apple, cabbage, apple, onion and mayo to create a sweet, crunchy coleslaw perfect for pairing with cold cuts of meat at Christmastime.


  • 300g fresh cabbage
  • 1 apple
  • 1 small red onion
  • 1 orange
  • 125g fresh cranberries
  • 60g caster sugar
  • 4 tbsp. mayonnaise
  • Salt and pepper


  1. Put the cranberries and sugar together in a bowl, cover and put into the fridge until you're ready to use them. Make sure you stir them together well.

  2. Shred the cabbage. Peel the onion and finely chop it, peel, core and finely slice the apple, then peel and segment the orange.

  3. Mix together the apple, onion, orange, cabbage and mayonnaise with some salt and pepper. When you're ready to serve, stir in the cranberries.

You could also use jarred cranberry sauce in this recipe if you can't find fresh cranberries - no-one would know! This recipe serves 8.
