Chewy Cranberry Cookies recipe

These chewy gooey cookies are a great alternative to the usual chocolate chip cookies, and the taste of the cranberries really punches through the sweet oaty flavour of the cookies. Try making up a batch to put in kid's lunchboxes or just to munch on with a cup of tea mid-afternoon.


  • 250g butter
  • 225g plain flour
  • 200g porridge oats
  • 100g dark brown sugar
  • 100g dried cranberries
  • 75g caster sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • Pinch salt
  • Pinch ground cinnamon
  • Pinch ground cloves
  • 1 tsp. bicarbonate of soda


  1. Preheat the oven to 180C.

  2. Beat the butter, sugar and vanilla together until pale and fluffy, then add in the eggs one at a time.

  3. In another bowl, mix together flour, bicarb, cinnamon, cloves and salt.

  4. Fold the porridge oats and the cranberries into the dough. It will be relatively firm.

  5. Put teaspoonfuls of the dough onto an ungreased baking tray, leaving room for them to spread, then cook for ten minutes. Remove from the oven straight away to prevent them from over baking and leave to cool in the tray.

Some white chocolate or milk chocolate chips would be a welcome addition to this recipe, as would some chopped hazelnuts. This recipe makes 48 cookies.
