Chestnut and Cranberry Stuffing recipe

A wonderfully flavourful stuffing, this recipe combines apple, cranberries, chestnuts, onion, wholemeal bread and herbs for a lovely earthy stuffing. Use it to stuff chicken, turkey or goose or bake it in a separate dish.


  • 10 large chestnuts
  • 125g butter
  • 1 small apple
  • 1 small onion
  • 1 wholemeal bread roll, cubed
  • 2 small sticks celery
  • 200g cranberries, fresh
  • 1 tsp. each ground marjoram, thyme and sage
  • 200ml water
  • Salt and pepper


  1. Cut a cross onto each chestnut, on the shell, and then roast at 180C for 15-20 minutes. Peel whilst warm and then chop.

  2. Peel, core and chop the apple, finely chop the celery, cube the bread roll and then mix the apple, celery, bread and cranberries together. Finely chop the onion and then cook it in the butter (all of it) until soft and sweet, then pour it into the bread mixture, including the butter.

  3. Add the water and seasoning, then stir in the chestnuts. Use to stuff poultry or bake at 180C for 15 minutes in a separate dish.

The cranberries work well in this as they give a little sweetness and tartness, which works really well against the richness of the meat. This recipe serves ten.
