Cranberry Bread (Bread Machine Recipe) recipe

A sweet bread that makes the most out of dried cranberries. Perfect for serving up with tea and coffee mid-afternoon or as an alternative dessert, served warm with some ice cream, this is a really simple bread to make too!

  • 275g strong white bread flour
  • 150g wholemeal flour
  • 45g butter
  • 275ml water
  • 75ml runny honey
  • Pinch salt
  • Pinch each of cinnamon, ground ginger and ground cloves
  • 125g dried cranberries
  • 1 dstsp. dried active yeast

  1. Place the ingredients into the bread machine in the order recommended by your manufacturer. Always separate liquids from the yeast with a barrier of flour.

  2. If your machine has a sweet bread cycle, select that.

  3. Add the cranberries at either the signal (if your machine has a fruit setting) or 3 or 4 minutes before the end of the kneading cycle. Cook.

You could substitute the cranberries for raisins if you prefer. Alter the spice amounts if you prefer spicier flavours. This recipe serves 12.
