Cranberry and Feta Couscous recipe

This tasty twist on couscous makes it into a filling and healthy lunch. Dried cranberries are cooked with couscous before being tossed with chopped cucumber, spinach leaves, feta cheese and a few spoons of balsamic dressing.

Ingredients:

  • 75g couscous
  • 40g dried cranberries
  • Enough water to cover
  • 1/2 cucumber
  • 50g crumbled feta cheese
  • 50g baby spinach leaves
  • 2 tbsp. balsamic dressing
  • Salt and pepper

Directions:

  1. Put the couscous and cranberries into a bowl, and cover with boiling water to around 5cm above the line of the couscous.

  2. Meanwhile, cut the cucumber in half and then scoop out the seeds before dicing.

  3. When the couscous has absorbed all of the water, stir in the cucumber, feta, spinach, dressing and a good pinch of salt and pepper. Serve warm, although you could also serve this cold.

Add in any vegetables that you have - a finely diced red onion would be delicious. This recipe serves two.
