Christmas Cranberry Bars recipe

These lovely bars are suitable for breakfast, or for snacking on during the day or for your lunch. Ever so sweet and ever so pretty, punctuated with white from the chocolate chips and red from the cranberries, you could also give these bars as foodie Christmas gifts.


  • 200g dried cranberries
  • 200g white chocolate chips
  • 75g dried coconut flakes
  • 1 x 400g tin condensed milk
  • 100g melted butter
  • 175g digestive biscuits


  1. Heat the oven to 170C.

  2. Whiz the digestives into crumbs in either a food processor or by putting them into a bag and bashing them with a rolling pin.

  3. Mix the biscuits with some melted butter and then press into a 12 x 9 inch baking tray (or similar).

  4. Mix the cranberries, coconut, chocolate and condensed milk together, then spread over the crust in the tin. Bake for 25 minutes to set.

Leave to cool fully before cutting into bars. If you like cranberries, add more - just omit a few of the chocolate chips. Nuts would also be a lovely addition to these bars too. This recipe serves 12.
